Breakfast Potato Nests

Wake up to crispy potato nests, cradling a sunshine yolk

4 Golden Kings All Rounders
1 tbsp cooking oil
1 tsp smoked paprika
salt and pepper (to taste)
4 free range eggs

TIP: You’ll also need a muffin tray to cook these nests


  1. Pre-heat oven to 190°C
  2. Wash the potatoes then grate (use the thickest option). Squeeze out any excess moisture using a clean tea towel or kitchen roll
  3. Toss the grated potato in the oil and seasoning
  4. Press the potato mixture into muffin tray (either non-stick or lightly greased), to form a nest. There should be enough space in the middle to add an egg.
  5. Bake the nests for 15 minutes until they start to crisp, then crack an egg into each one
  6. Bake the egg for around 6-8 minutes, until the white is cooked but the yolk is still soft
  7. Serve immediately
