Friday Fish Supper

Nothing better than a 'chippy tea' at the end of a long week. Try our simple recipe for curried chips and minty peas to accompany your favourite Friday fish

INGREDIENTS

For the curried chips:

3 Golden Kings Potatoes
2 tbsp curry powder
½ tbsp cumin
½ tbsp turmeric
½ tsp chilli powder (optional)

For the peas: 

150g frozen peas
2 sprigs of fresh mint
squeeze of lemon juice
salt and pepper to taste

METHOD

  1. Peel and slice the potatoes into thin chips, then par-boil for 5 minutes whilst you make up your seasoning
  2. Drain the chips, and cover with the seasoning, stirring for an even coating
  3. Add to a baking tray with a little pre-heated oil, then bake until the chips are crispy and golden
  4. While the chips are cooking, prep the peas by finely chopping some fresh mint leaves
  5. Cook the peas before stirring in the fresh mint, salt and pepper and lemon juice
  6. Serve the chips and peas with your favourite fish
