Spicy Stuffed Jacket Potatoes

Fluffy baked potatoes loaded with zesty chili, creamy sour cream, and dreamy guacamole

Golden Kings Jackets or large Golden Kings All Rounders
chilli con carne (great for using up leftovers)
sour cream
salt and pepper
fresh coriander (to garnish, optional)


  1. Pre-heat the oven or air fryer to 200°C, wash and dry the potatoes
  2. Use a fork to prick the skins of the potatoes, several times
  3. Rub a little oil over each potato and season with a little of the salt
  4. Bake the potatoes directly on the oven racks for around an hour, until tender
  5. Once the potatoes are ready, allow them to cool slightly before slicing lengthways, fluffing the insides with a fork and adding salt and pepper to your taste
  6. Spoon a generous helping of chilli con carne on top (you can heat this whilst the potato cools)
  7. Top with dollops of sour cream and guacamole, plus the coriander if you like it
