The Paddington Sandwich

A beary special sandwich!

INGREDIENTS

1 gammon joint
1 large onion, halved
2 cloves
2 bay leaves
1 large orange
2 tbsp brown sugar
1 tbsp honey
2 tbsp marmalade
4 Golden Kings potatoes
1 soft white bread slice
1 egg (optional)

METHOD

  1. Place the gammon joint in a pan, cover with water, and bring to the boil.
  2. Refill the pan with half orange juice and half water to cover the gammon. Add the onion halves studded with cloves and bay leaves. Simmer for 35 minutes.
  3. For the glaze, zest and juice the orange. Combine the zest, juice, brown sugar, honey, and marmalade in a pan, stirring over low heat until smooth.
  4. Remove the gammon, stud with cloves, and brush with the marmalade glaze. Bake at 180°C for 35 minutes, until golden and cooked through.
  5. Wash, peel, and chip the Golden Kings potatoes. Bake for 35-40 minutes, or until crispy.
  6. Assemble the sandwich by layering the glazed ham and crispy chips on a slice of soft white bread. Top with a fried egg, if desired.
